A French vine variety that found its “new Italian home" in Trentino: intense aroma of black currant and cherry, elegant and so flavor. From vineyards located on the hills of Pressano, a hamlet near Lavis. Cultivated either with the typical Trentino pergola training system or the gouyot system, on loamy clay soil.
Hills around Lavis and Valle di Cembra (TN)
100% Pinot Noir.
After a maceration phase (about 12 days) at controlled temperature with frequent pumping over, the wine is drawn off and decanted into steel tanks, before being aged in large oak barrels and barriques.
Ideal with vegetable soups, pasta dishes with beans, polenta and dipping, baked shank, mixed grilled meat. It also goes very well with mixed boiled meat.
Intense, gentle and characteristic, with hints of undergrowth; fruity with notes of black currant and cherry.
Dry but elegant and with a bitterish base, also sapid and soft.
